The caterpillar by the kilo, a good source of protein

In African countries, caterpillars are literally falling from the sky. This is because their tiny legs no longer adhere to the leaves of the trees on which they live. The larvae eventually fall down to the ground where they can be picked up. In other countries, caterpillars are raised in farms under special conditions. Once collected, the larvae are washed and then placed small long term storage bags or big ones when they come by the kilo. Moreover, to keep them in good conditions, they should be stored in a cool and dry place. For example, your kitchen cupboard makes a perfect for storage.

The caterpillar loose an essential nutrient and organic

In Africa, the consumption of caterpillar is a weapon in the fight against nutritional deficiencies, especially deficiencies in protein. Caterpillars are eaten mainly in Central Africa, including the Democratic Republic of the Congo where it is considered a food of choice thanks to its nutrient content. In some areas, this insect is also part of the daily diet of whole villages where the consumption of edible insects is about 22 % of daily food intake per capita.

The caterpillar of Africa and its virtues

Caterpillars are very rich in protein, iron and calcium, which is also true for virtually all other edible insects. For example, in 200 grams of dried caterpillars  you find about 103 grams of protein, 34 grams of carbohydrates and about 20 grams of fat. These gems of nature are also rich in minerals: calcium, magnesium, vitamin, iron… The largest consumers of caterpillar in the world are definitely the Congolese. In the Democratic Republic of Congo, these small crawling insects play a dual role, both as an essential nutritious food and as a delicacy in local cuisine.
